Drawing on twelve years of experience as a cook in Saint Petersburg in the service of Count Viktor Nikitich Panin, Minister of Justice of the Russian Empire, the author presents more than two hundred local recipes: fish borscht, elk in the Polish style, buckwheat porridge, Siberian pelmeni, sturgeon rassolnik, vatrushki with jam, various kinds of blini and olad’i, bear ham, elk in the Lithuanian style, and others.
